Jane's Recipes for Ravenous Ramblers

Jane's cakes were very popular and she has had requests for the recipes, so here they are:

Two-Tier Orange Sponge Cake: 5 oz sugar
5 oz margarine or butter
2 eggs
8 oz self-raising flour
4 tablespoons orange juice
plus grated rind of orange

Gas 3 or 4 for 30 mins

Sandwich together with orange butter icing:

3 oz butter plus 6 oz icing sugar

Pumpkin Pie: 1 x 9-inch flan case made with shortcrust pastry uncooked

Filling : 4 oz (2/3 cup) brown sugar
1/8 teaspoon salt
1 1/2 teaspoon ground cinnamom
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
24 oz canned purréed pumpkin
3 eggs
10 fl.oz single cream (1 1/4 cups light cream) I used about half this but I didnt use canned pumpkin, I made my own purée which was probably wetter (!)

Place the flan case on a baking sheet.
Preheat the oven to fairly hot 375 degrees F (Gas Mark 5, 190 degrees C)
Combine the sugar, salt, cinnamom, ginger and cloves in a small mixing bowl.
Place the pumpkin purée in a large mixing bowl.
Add the eggs and mix well with a wooden spoon.
With the spoon gradually stir the sugar and spice mixture and the cream into the pumpkin mixture and beat well until it is smooth.
Pour the pumpkin mixture into the flan case.
Place the baking sheet in the oven.
Bake the pie for 45 to 50 minutes or until a knife inserted in the filling comes out clean.
Transfer the pie to a serving dish and serve either hot or cold.
