"This 'n That" from Sheila

Firstly many thanks to Sandy and Denise for saving our Picnic Walk. Denise led us on a very green if slightly wet walk and Sandy didn’t turn a hair at these wet ladies invading her house. Perhaps her husband did but we shall never know. Congratulations to all for a good turn out.

Monday the walk starts at Ohain. Meeting point # 18 near the bandstand. Vyvyan has kindly invited us to have a drink at her house afterwards so even if the weather is bad we shall try a short walk. This may be Kathleen’s (and Plume’s) last appearance???

We are meeting at Neerijse on Monday July 9 to do the walk from Denzil Walton’s book. We know from the old days when we did this that it can be muddy after rain.
Directions: Go to Overijse # 19. Below the church turn left on the N 253 to Leuven. Park in front of the church in the centre of Neerijse. I am not sure whether there is a café and if there is, if it is open on Mondays. We shall find out!

Lastly some ladies asked me for the recipe for the onion tart I brought for the picnic. This is dead easy and it really was the first time I had made it.

Onion Tart
Ingredients:

150 g Roquefort 4 big onions 2 cloves garlic, crushed (optional) 60 g dry raisins
1 pastry brisee 2 eggs (beaten) 5 cl fresh cream 1 Tbls sugar (or less)
3 Tbls olive oil salt and pepper.

Cut the onions in rounds and sweat in a pan with some oil for 15 mins. Add the sugar and cook over a good heat, stirring often, for 2 minutes. Add the raisins and remove from the heat. Salt lightly (Roquefort is already quite salty).
Break up the Roquefort in a pan, add the cream and warm gently until it is well mixed in. Off the fire, add the beaten eggs and mix well. Taste for seasoning.
Line a quiche tin with baking paper. Add the onions. Cover with the Roquefort mixture and then with the pastry, tucking any excess inside the tin.
Cook 30 mins at 180. Leave the tart for 10 minutes before turning it out onto a plate.
Serve warm with a little salad.
